Good Morning! Many of you have asked me about some of my recipes and what I eat and drink throughout the day. Disclaimer, I am not a professional of any sort 😉 What works for me is keeping it simple. If its a meat, veggie, or fruit I can eat it! The less I add to the food, the better results I have.
Breakfast:
This is my biggest problem meal of the day. Not because I don’t know what to make, but because I forget to eat all together!
First thing when I wake up and start brewing my coffee, I have 1 Tablespoon of Apple Cider Vinegar with 2 oz of water. To me it tastes horrible and I have to plug my nose while I drink it! I love the way it makes me feel so I keep taking it! Pairing ACV with a healthy diet and exercising has visibly diminished my bloating and cleared up my skin!
Coffee. It gives me life. I have tried to cut coffee out of my diet all together… Really. What was I thinking!!! Instead of having all the yummy creamers and sugar I use one pack of Truvia and heavy whipping cream! Heavy whipping cream has no carbs and tastes delicious. I try to stick to only two cups a day, but sometimes my day calls for three or four 😮
Now I can get to the food! Like I said before, I like to keep things simple. I see the best results when I am repetitive. It doesn’t bother me to eat the same food over and over. If I have spiced it well and it tastes good, I will eat it again! Eggs!! I love them. I chop up whatever veggies I have in the fridge. I usually always have asparagus (my favorite) and zucchini on hand. Throw them in the pan and sauté with garlic powder, pepper, and onion powder. I rarely use salt, just because I don’t feel like I need it, and added bonus I’m not over loading on sodium! once the veggies are cooked I scramble in one egg plus an egg white. Plate it and add a little salsa, and that’s it! So easy and so yummy!! Sometimes I will add cheese, but sadly cheese doesn’t allow me to lose weight as fast 😢
Lunch:
If I ate breakfast at a decent time, I will have some lunch. Right now my lunches consist of a protein + veggie + fruit. We buy the frozen lean ground beef at Costco and cook up 1 lb at a time seasoning it with and divide it up. Having this on hand allows me to throw some salsa on top and I’m done.
If I don’t have any meat already prepped a lot of times I will just have 5 or 6 slices of deli ham or turkey with some mustard and a sliced up cucumber. Having something crunchy, like the cucumber, always tricks my mind into thinking I’m having something super satisfying! For my fruit I usually have an apple, half a grapefruit, or a bowl of strawberries.
Dinner:
I usually have two different dinner recipes I choose from. The recipes during the week when it is just me, and the recipes during the weekend when Jules is home. When Jules is gone during the week I keep things as easy as I possibly can! One of my favorite and easiest recipes is my Baked Shrimp and Asparagus.
Did I mention how easy it is!? I line up my asparagus in the middle of the pan. Drizzle with olive oil and season with season salt, garlic powder, and onion powder. Bake that at 425 degrees for 5 minutes. While that is baking I have my shrimp marinating in olive oil, season salt, garlic powder, and crushed pepper flakes. Once the asparagus has baked 5 minutes I place the shrimp around the edge of the pan and bake for another 5 minutes. Done. So yummy and so easy!!
That pretty much sums up a day of my eating! As far as drinks go, I drink water and La Croix. I love my La Croix! I have never been much of a soda fan so I don’t drink it to replace that. I just honestly love having a La Croix if I am needing a little pick me up. Every now and then I will have some green tea or a hot brewed Lipton tea.
I hope this answers some of your questions and inspires you to come up with some of your own easy, healthy, and yummy recipes!! I am going to try and do a food post once a week. I have more of my go to recipes that I will be sharing with you all!
XO,
Corrine Monique
