Dinner for two, but usually one during the week! I try and keep things simple but oh so tasty!! This recipe that I make maybe 3 times a week follows exactly that.
Chicken Thighs/Legs and Asparagus:
We love shopping at Costco! The convenience gets us every time. We really like to purchase our meat from Costco. The frozen ground beef I mentioned on my Daily Food Diary post is usually always in our freezer. Another staple meat we get is the Kirkland boneless & skinless Chicken Legs and Thighs. So yummy and so easy to cook!
Preheat your oven to 425. While the oven is preheating season both sides of your legs and thighs with season salt, pepper, garlic powder, and paprika. Place them on a baking sheet and drizzle with a little olive oil. Bake for 20-25 minutes flipping halfway through your time. That’s it!
For the asparagus, I just line them up on a baking sheet, drizzle with a little bit of olive oil, and season with season salt, garlic powder, and onion powder. Bake for 10 minutes at 400 degrees!
Since we have cut carbs out of our meals that makes a meal. Add a nice Lemon La Croix and you are ready to dig in!
