There is nothing better than a nice fall recipe brewing in the crockpot all day long. Am I right??? Getting dinner planned and on the table is not my forte… I will admit it. I always have really good intentions of planning the week out and getting all the grocery shopping done so I can easily prepare yummy, beautiful dinners. Reality check! It is so nice to have recipes that are just as tastey leftover! This recipe is basically amazing all the way around.
Tis the season to use up all that squash. Butternut squash has such a great flavor and the orange color is so pretty! Is it weird I like it when my food looks good?? No, okay good! Well this Butternut Squash Chili is full of color! The prep is super easy and I have some tips to make it even easier! So lets dive in.
I always start with chopping my veggies. In this recipe we are dicing butternut squash, celery, and one bell pepper. Have you ever tried to cut a butternut squash? It’s not easy. So I get the pre diced squash! Costco usually has a larger pack of butternut squash around this time of year, but I have been loving Albertson’s smaller 1 lb 12 oz pack! This cuts the veggie prep time in half!
Veggies are chopped, and now I brown the ground beef. I use my cast iron skillet and season the ground beef with Seasoning Salt, Garlic powder, Onion powder, and Chili powder. These are the spices I use almost every time I cook ground beef. It always gives the meet a great flavor!
Next I drain the beans, and other than opening a couple cans, this concludes the actual prep part! Super easy! The next steps include throwing all the ingredients into the crock pot.
It really doesn’t matter what order you throw everything into the Crockpot, but I usually do my squash and veggies first, then I follow with beans and meat, and last I sprinkle the additional spices. Mix everything together cover the Crockpot and set it to Low for 5-6 hours, or until the squash is tender.
Once the butternut squash is tender serve it with your desired toppings! We usually do shredded cheddar cheese, and a little sour cream! We like to keep things simple. You could totally do green onions, and maybe even some avocado! Now it’s time to dig in! Enjoy!!
Ingredients:
1 lb Ground Beef (season meat with seasoning salt, onion powder, garlic powder, and chili powder)
1 medium Butternut Squash, peeled and cubed
1 Bell Pepper, diced
4 stalks of Celery, diced
1 can Pinto Beans, drained
1 can Kidney Beans, drained
1 can Fire Roasted Tomatoes with juices
1 can Rotel Tomatoes with Green Chiles
1 Tbs Chili Powder
1 tsp Smoked Paprika
1/2 tsp Salt, or more
Toppings:
shredded cheese
sour cream
Instructions:
Brown meat
Place squash and veggies in Crockpot
Followed by beans and meat
Add spices and stir
Cook 6 hours on low, or until Squash is tender
Serve and add Toppings
