Halfway through the week and I am already dreaming of a home cooked meal! We love traveling and exploring new places, but sometimes you just want that home cooked meal! One of our favorite dishes when we are craving the yummy comfort food, is a Roast and Mashed Potatoes! I mean really is there anything better??? A lot of times when you think of a Crockpot Roast you think super dried out, and not at all comforting. This recipe is going to change that, I promise. Oh and did I mention there are only 5 ingredients, and that includes the actual roast and water!
This is the only way Jules requests the roast to be made and everyone we make it for is always shocked with just how moist it is! Crowd please, check. Super easy dinner, check. I mean does your Sunday night meal need to fulfill anymore criteria???? So let’s get to it!
I wasn’t joking when I said there were only five ingredients. It’s really that easy. Whisk the ranch packet, brown gravy packet, and Italian dressing packet into 2 (or more) cups of water. I usually do 2 cups with any roast between the sizes of 2-5 lbs. If your roast is bigger, I might add more water, but really you want just enough water to cover the bottom of the crockpot about an inch.
Place the roast in the Crockpot. I use the 6 quart Crockpot from Costco, and we love it! Pour the water and seasonings over the roast, cover and set for 8 hours on Low. That’s it. I am not even kidding! It immediately starts making your house smell so delicious and by the time it’s done, it is almost too difficult to scoop it out of the Crockpot! The meat just falls apart!
So the day I made this roast and planned to photograph the process, I got the actual cooking part photographed, and then we were just so excited to dig in I totally forgot to take pictures of the final product! Ooops! Believe me when I say it was delicious! It was so good, there weren’t any leftovers to try and photograph at the end of dinner!
Once we take the roast out we like to add a couple tablespoons or so to the drippings left in the Crockpot! This makes the most delicious gravy for those mashed potatoes, and, again, it’s super easy! Pair the roast and potatoes with my favorite roasted asparagus recipe and you have a meal! Like a really tasty meal!

Ingredients:
Chuck Roast 2-5 lbs
1 Dry Ranch Dressing Packet
1 Dry Italian Dressing Packet
1 Brown Gravy Packet
2 Cups of Water
Instructions:
Mix all 3 packets with 2 cups of water
Place roast in the crockpot
Pour water and packets into the crockpot
Cover and set for 8 hours on Low
