What’s better than a yummy home cooked meal on a chilly Sunday evening? I haven’t done a dinner recipe in a while so I figured I would let you in on one of our favorites! This recipe is super easy and so so yummy!! You probably have all the ingredients sitting in your cupboards right now! Whenever we are struggling to decide on dinner, I always start googling the main items I have on hand and somehow piece together a handful of ideas to come up with a recipe. That’s exactly how this one came about, so let’s get started!
This is what you will need:
1 pound chicken breast (we just use the amount of chicken that will serve us, 2-4 breasts)
1 tsp paprika
2 tsp Italian seasoning (thyme, oregano, and basil combined)
4 strips bacon (we do a couple more because… BACON)
4 garlic cloves, minced
2 tablespoons butter
2 medium tomatoes, diced
1 cup fresh spinach (I just eyeball it and throw as much as I want in! We like our greens.)
1 tsp crushed red pepper flakes
1 cup chicken stock
1 cup whipping cream (you could use half and half for a lighter cream)
1 cup Parmesan
salt and pepper to taste
Rice (we usually make a batch of brown rice in our rice cooker, but you can choose any rice you want to cover with the chicken and sauce.)
This is how you make it:
Season chicken breasts with 1 teaspoon Italian seasoning and salt and pepper to taste.
Cook bacon in a separate pan until crispy. Drain excess fat and cut into small bits, set aside.
Melt 1 tablespoon butter in a large skillet over medium high heat. (We absolutely love our cast iron skillets you can get HERE plus you get an additional 15% off with code: SAVEMORE20) Add chicken breasts and sear both sides until browned, about 4-5 minutes each side, set aside on a plate.
Melt the remaining tablespoon of butter in the same pan. Add garlic, paprika, 1 teaspoon Italian seasoning and saute for 2 to 3 minutes. Stir in tomato and chicken broth and simmer 4 to 5 minutes.
Stir in heavy whipping cream, parmesean, spinach and crushed chili pepper flakes. Reduce heat to simmer for 2 to 3 minutes until parmesean is melted and everything is well combined.
Add bacon bits to the sauce, and stir.
Add chicken breasts back into the skillet and simmer in the sauce for 10-15 minutes until chicken is cooked through.
Salt and pepper to taste.
Serve immediately over rice, pasta, or veggie noodles.
